Hi Everyone!
My name is Britnee-Ann, I live in Anchorage, AK, I have one beautiful daughter, and an amazing golden retriever named Maverick.
I also cannot eat gluten due to Celiac disease which I was diagnosed with a year after giving birth to my daughter.
At first, it ruined my life. So many foods I loved I could no longer eat. So many events that centered around food I couldn’t fully participate in. So much wasted time complaining about my lot in life.
Finally, I started just doing things on my own to control the situation rather than let it control me. Luckily, I’ve always enjoyed cooking and have been relatively successful. Me, I’m stubborn. There are too many recipes I grew up with that I wasn’t ready to give up and I’m still not ready to give up. I had to experiment until I was able to recreate them gluten free and have them taste good enough that my non-Celiac family members could not tell a difference. This took a lot of trial and error along with too many foods thrown in the garbage out of complete frustration and disappointment.
Part of the success was to throw all rules out of the window. Gluten free food does not behave the same way as foods containing the gluten protein. This was the hardest fact to fully accept. I know many people will disagree with my methods or have their own methods. I will probably use brands others would not. I make no apologies for my ways and no one else should either. I am here to share my thoughts and techniques plus I hope to hear other people’s opinions as well.
I love trying to make a recipe containing gluten and turning it into something gluten free that everyone can enjoy. Hopefully I can successfully accomplish this for all of you.
